This recipe explains a simple Kerala-style method for preparing beef fry at home.

Ingredients

For cooking the beef

  • 1 kg beef, cut into small pieces
  • 1 teaspoon turmeric powder
  • 1½ teaspoons chilli powder
  • 1½ teaspoons coriander powder
  • 1 teaspoon black pepper powder
  • Salt as required
  • A small amount of water

For the fry

  • 2 large onions, sliced
  • 1 tablespoon ginger, chopped
  • 1 tablespoon garlic, chopped
  • 2–3 green chillies, sliced
  • Curry leaves
  • ½ teaspoon fennel seeds
  • 2–3 tablespoons coconut oil
  • Additional black pepper according to taste

Preparation

Step 1 – Marinate and cook the beef

Clean the beef and cut it into suitable pieces.

Add turmeric powder, chilli powder, coriander powder, black pepper and salt. Mix well and allow the spices to coat the beef.

Transfer the beef to a cooking vessel or pressure cooker. Add a small amount of water and cook until the beef becomes tender.

Step 2 – Prepare the masala

Heat coconut oil in a pan.

Add fennel seeds and allow them to release their aroma. Add sliced onions, ginger, garlic and green chillies.

Cook until the onions become soft and lightly browned.

Add curry leaves and mix well.

Step 3 – Fry the beef

Add the cooked beef to the masala.

Mix everything together and cook over medium heat. Continue stirring until excess moisture reduces and the beef becomes nicely roasted.

Add additional black pepper according to your preferred taste.

For a more traditional flavour, allow the beef to fry slowly until the masala coats the pieces well.
